Lillian Kornfeld [1901-1995] - "The First Lady of Israeli kitchen" - nutritionist, journalist, pioneer of cookbook authors in Israel. Born in Montreal, Canada, to her parents Bernard and Bertha Curt, Russian-born Jews. In her youth she joined the "Yehuda Hatzair" youth movement in Montreal, and in 1922 immigrated to Israel. Kornfeld consulted on nutrition issues for British Mandate institutions, the US military stationed in Israel during World War II, the Red Cross, and UNRRA. (Under British rule at the time), which provided food to thousands of Balkan refugees housed in the camp after fleeing their country from the German occupation. Kornfeld's cookery and guidance books, as well as the nutrition and cooking columns published over the years in various newspapers (including Palestine Post, Jerusalem Post, HaAretz and Davar), include not only recipes, guidelines and explanations that reflect worldview. She promoted and emphasized stews and food products used in the Middle East and Arab countries, and sought to make the food and cooking tradition of these countries accessible to its readers, believing that local kitchen is the most appropriate.
